Amaranth has been cultivated as grain for 8000 years. It is also known as Pigweed.Amaranth seeds are light yellowish in color and are about the size of poppy seeds.
Amaranth has great nutritional properties as 30% higher protein, rich in the amino acid, highest content of Lysine and fiber compared to other cereal grains.It is gluten-free. Amaranth is considered to be an effective agent against cancer and heart disease
Nowadays Amaranth flour is widely used in making multigrain bread products.
